Michael works at Uglesich's - my all time favorite restaurant in New Orleans (see previous post). He had won Lousiana's Best Oyster Shuckster contest 5 years in a row. You are judged on the critera of your speed and cleanliness. I wonder when Post-Katrina New Orleans will hold it's next oyster shuckstering contest again.
